The story goes that the dish has its origins in the Age of Discovery, when in 1415, the population ceded the meat they had to the fleet of Infante D. Henrique when it left to conquer Ceuta, with only the viscera left to eat. Today's dish, in addition to tripe, also includes sausages, various types of meat and white beans.
